Method

Prepare Crab and Garnishes

    If using imitation kani sticks: remove sticks from packaging and gently separate into long filaments by pulling apart with your fingers along the grain to create sashimi-like strips (about 8 pieces yields 6–8 strips each depending on size). Pat dry with a towel to remove moisture.

    If using cooked snow crab legs: gently crack shells with kitchen shears or a crab cracker, remove meat in whole sections, and trim away cartilage. Keep meat cold and pat dry with paper towels. Slice any large pieces lengthwise into 1/4" thick slices for a sashimi presentation.

    Prepare bed garnishes: julienne the daikon finely (matchstick). Thinly slice the cucumber into rounds or ribbons. Arrange a small mound of daikon and cucumber on chilled plates or a platter lined with a layer of crushed ice to keep the crab cold.

    Place 1–2 shiso leaves per serving beside the daikon, and add microgreens or mitsuba on top of the bed for color. Place lemon wedges at the edge of the plate.

Assemble and Season

    Arrange the kani strips or crab sashimi over the daikon bed in an attractive fan or ribbon pattern. Leave space for dipping sauce bowls.

    In small serving bowls, combine soy sauce with rice vinegar and yuzu/lemon juice (if using) and stir. Pour wasabi into a separate small bowl or place a small dab on the edge of the soy sauce bowl for individual mixing.

    Lightly drizzle a few drops (about 1/8–1/4 tsp) of sesame oil over the crab if desired for aroma — do not overdo, as it will mask delicate flavor. Sprinkle toasted sesame seeds over the crab for texture.

    Chill the assembled platter on ice until ready to serve. Provide chopsticks or small forks and instruct diners to use shiso leaves as a wrap or to eat the crab plainly with a squeeze of lemon and a dip in the soy-wasabi mixture.

    Serve immediately while the crab is cold. If using imitation crab, it is already cooked and safe to eat cold. If using cooked snow crab, ensure it was refrigerated and handled properly and consume within 24 hours of cooking for best quality.

    Leftovers: store crab meat tightly wrapped in the refrigerator and consume within 24–48 hours. Discard if any off odors develop.
