Soften cream cheese

Remove the 8 oz cream cheese from the refrigerator and let it sit at room temperature for 20–30 minutes, or microwave in 5–7 second bursts until easily mashable but not melted.

Prepare crab

Finely chop the imitation crab or real crab meat so there are no large chunks; measure 1 cup and pat lightly with paper towel to remove excess moisture if needed.

Mix filling

In a medium bowl, combine the softened cream cheese, chopped crab, 2 tbsp sliced green onions, 1 tsp minced garlic, 1 tsp soy sauce, 1 tsp Worcestershire sauce, 1 tsp sugar, 1 tsp ground black pepper, and 1 tsp sesame oil. Mix thoroughly with a spatula until smooth and evenly distributed. Taste and adjust seasoning (add a pinch more sugar or soy sauce if needed).

Prepare wrappers

Arrange a clean work surface and lay out wonton wrappers in a single layer so they do not stick together. Keep a small bowl of cold water nearby to seal edges.

Fill wrappers

Place about 1 teaspoon of the crab-cream cheese filling in the center of each wonton wrapper. Do not overfill; a level teaspoon per wrapper is ideal for crisp, well-sealed Rangoon.

Fold and seal

Option A — Traditional triangle: Lightly wet two adjacent edges with a fingertip dipped in cold water, fold wrapper over to form a triangle, press edges to seal, then optionally bring the two outer corners together and press to adhere. Option B — Purse: Place filling in center, wet all four edges lightly, bring opposite corners together and pinch to form a small purse. Ensure there are no air pockets and all seams are tightly sealed to prevent leaking.

Place assembled Krab Rangoons on a tray in a single layer and refrigerate for 15–20 minutes; this firms the filling and helps wrappers hold shape during frying.

Heat oil

Pour 2 cups of neutral oil into a heavy-bottomed saucepan or deep skillet to a depth of about 1–1.5 inches (adjust quantity as needed for your pan). Heat over medium-high until the oil reaches 350°F (175°C) or until a small piece of wrapper sizzles and browns in about 30–45 seconds.

Fry rangoons

Working in batches of 6–8 (do not overcrowd), gently lower chilled Krab Rangoons into the hot oil seam-side up using a slotted spoon or spider. Fry for 1.5–2.5 minutes per side, turning once if needed, until golden brown and crisp. Total fry time per batch will be about 3–4 minutes depending on size and oil temperature.

Drain

Remove rangoons with a slotted spoon and transfer to a paper-towel-lined baking sheet to drain. If holding multiple batches, keep cooked rangoons warm in a 200°F (95°C) oven on a wire rack for up to 20 minutes to maintain crispness.

Serving

Finish and serve

Arrange the hot Krab Rangoons on a platter. Sprinkle lightly with 1 tsp sesame seeds if desired and serve immediately with sweet and sour or sweet chili sauce for dipping. Each batch yields about 30 pieces; serve 5 pieces per person for 6 servings.
