Soften and combine

If cream cheese is not fully softened, microwave the 8 oz block on low power for 10–15 seconds until spreadable but not melted.

In a medium mixing bowl, add the softened cream cheese. Using a fork or paddle, beat until smooth and slightly fluffy.

Fold in the finely chopped imitation crab meat, making sure pieces are small (roughly 1/4 inch) so they fit comfortably into wonton wrappers.

Add the finely chopped green onion, minced garlic, 1 tsp soy sauce, 1 tsp Worcestershire sauce, 1 tsp sugar, 1 tsp ground white pepper, and 1 tsp sesame oil. Mix thoroughly until evenly combined and creamy. Taste and adjust seasoning (add a pinch more sugar or soy sauce if desired).

Cover the bowl and refrigerate the filling for at least 15 minutes to firm slightly — this makes portioning easier.

Assembly & Frying

Prepare an assembly area: lay out wonton wrappers in a single layer on a clean work surface, have a small bowl with the egg wash (beat 1 large egg with 1 tsp water), a small spoon or piping bag for filling, and a tray lined with paper towels for finished Rangoon.

Working with one wrapper at a time, place it diamond-shaped (one corner facing you). Spoon about 1 heaping teaspoon (approximately 8–10 g) of the chilled filling into the center of each wrapper. Do not overfill—leaving room around edges ensures a proper seal.

Brush the edges of the wrapper lightly with the egg wash. Fold the bottom corner up to meet the top corner to form a triangle, press gently to seal, removing excess air. Optionally, bring the two side corners together and press to form the classic purse shape; seal with a dab of egg wash. Repeat until all wrappers are filled (should yield about 24 depending on fill size).

Heat oil: pour 3–4 cups vegetable oil into a deep pot or Dutch oven to reach a depth of 1.5–2 inches. Heat over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small scrap of wonton; it should sizzle and brown in about 20–30 seconds.

Working in batches (do not overcrowd the pot), carefully lower 6–8 Krab Rangoons into the hot oil with a slotted spoon or spider. Fry for 2–3 minutes, turning once, until golden brown and crisp.

Remove with a slotted spoon and transfer to the paper towel–lined tray to drain. If desired, lightly brush with a little neutral oil to add sheen (optional). Allow to cool 1–2 minutes before serving so filling isn't piping hot.

Repeat frying remaining Rangoon. Keep finished batches warm in a single layer in a 200°F (95°C) oven for up to 20 minutes while you finish remaining batches.

Dipping Sauce (optional)

For a simple accompaniment, place 1 cup sweet chili sauce in a small bowl. Optionally stir in 2 tbsp soy sauce for a slightly saltier contrast. Serve alongside warm Krab Rangoon.
