Sushi Rice
Rinse and cook rice
Place 1 cup short‑grain sushi rice in a fine mesh sieve and rinse under cold running water, swirling with your hand, until the water runs almost clear (2–3 minutes). Drain 10–15 seconds. Combine rinsed rice and 1.1 cup water in a small saucepan with tight‑fitting lid. Let sit 30 minutes (optional for better texture). Bring to a gentle boil over medium heat, then reduce to low, cover and simmer 12–14 minutes until water is absorbed. Remove from heat and let rest, covered, 10 minutes.
Season rice
While rice rests, warm 2 tbs rice vinegar, 1 tsp sugar and 1 tsp salt in a small bowl just until sugar dissolves (microwave ~10 seconds or stir). Transfer rice to a shallow nonreactive bowl. Pour vinegar mixture evenly over rice and fold gently with a wooden spatula or rice paddle to combine and cool slightly, fanning if possible until rice is just warm. Cover with a damp towel to keep moist while you prepare filling.
Spicy Snow Crab Filling
Prepare crab mixture: In a medium bowl, combine 10 oz flaked snow crab, 3 tbs Japanese mayonnaise, 1 tbs Sriracha (adjust to heat preference), 1 tsp sesame oil, and 1 tbs thinly sliced scallion. Taste and adjust seasoning—add a pinch more Sriracha or a little soy if it needs salt. Keep chilled until assembly.
Vegetables
Prepare cucumber and avocado: Julienne the cucumber into long matchsticks about 1⁄8–1⁄4 inch thick and drain any excess moisture on paper towels. Halve and pit the avocado, peel and slice lengthwise into 8 thin slices. If desired, toss cucumber lightly with a pinch of salt and drain for 5 minutes to remove excess water.
Assembly & Garnish
Set up: Place a bamboo sushi mat on plastic wrap (optional) and position one nori sheet shiny side down on the mat. Keep a small bowl of water nearby to wet your fingers (prevents rice sticking).
Spread rice: With wet fingers, take about 3/4 cup seasoned sushi rice and evenly spread it over the nori, leaving a 1/2 inch (1.5 cm) strip at the far edge free of rice. Press rice gently to an even 1/4–1/3 inch thickness.
Flip (inside-out roll option): For a classic California-style inside-out roll (rice outside), place a sheet of plastic wrap over the rice, flip the nori so rice faces down on the plastic, then remove the mat and plastic. For a simple maki (nori outside), keep rice on nori as is.
Roll: Lift the mat edge closest to you, and roll tightly away from you, using the mat to press and shape the roll into a firm cylinder. Squeeze gently as you roll to compact fillings without crushing the avocado.
Finish: Wet the exposed nori edge with a little water to seal the roll. Let the roll rest seam-side down for 1–2 minutes to set. Repeat with remaining ingredients to make 3–4 rolls total.
Slice: Using a very sharp knife moistened with water (wipe between cuts), cut each roll into 6–8 pieces. Clean the knife between slices for neat cuts. Arrange on a platter. Sprinkle toasted sesame seeds over the rolls and a few extra sliced scallions if desired.
Serve: Serve immediately with soy sauce, pickled ginger and wasabi on the side.
