    Cook bacon

    Heat a medium nonstick or cast-iron skillet over medium heat. Lay 3 bacon slices in a single layer. Cook, turning occasionally, until fat is rendered and bacon is crisped to your liking, about 6–9 minutes depending on thickness. Transfer bacon to a paper-towel-lined plate and reserve the bacon fat in the skillet for the potatoes (or wipe skillet and use olive oil if you prefer).

    Prepare potatoes

    If not already diced, peel (optional) and cut the russet potato into 1/2-inch cubes and rinse briefly to remove excess starch; pat dry with a towel. Dice the onion and bell pepper and set aside.

    Pan and season

    If skillet contains bacon fat, heat it over medium-high and add 1 tbs olive oil only if the skillet looks dry (use the bacon fat to flavor the potatoes). If you removed bacon fat or prefer no bacon fat, heat 1 tbs olive oil in a medium skillet over medium-high heat.

    Cook potatoes

    Add the diced potatoes in a single layer. Let them cook undisturbed for 3–4 minutes to form a golden crust, then stir/turn. Continue cooking and stirring occasionally for about 8–10 minutes more, lowering heat to medium if they brown too fast. If potatoes are browning but still firm, cover the skillet for 3–4 minutes to steam through, then uncover to crisp again.

    Add aromatics and season

    When potatoes are mostly tender (test a cube with a fork), add the diced onion and bell pepper. Sprinkle 0.5 tsp paprika, 0.25 tsp garlic powder, 0.5 tsp salt, and 0.25 tsp black pepper over the potatoes and vegetables. Continue cooking uncovered, stirring occasionally, until onions and peppers are softened and potatoes are golden and crisp in spots, about 3–5 minutes.

    Finish home fries

    Taste and adjust seasoning if needed. Stir in 1 tbs chopped fresh parsley (optional). Transfer home fries to a warmed plate and keep warm while you cook eggs and toast.

    Heat pan for eggs

    Use the same skillet (wipe out excess crumbs but keep any remaining fat) or a clean small skillet. Heat over medium-low and add 1 tbs butter. Let butter melt and foam but not brown.

    Cook eggs (sunny-side or over-easy)

    Crack 2 large eggs into a small bowl, then gently slide them into the skillet. Sprinkle 0.25 tsp salt and 0.125 tsp black pepper over the eggs. For sunny-side: cook gently until whites are set but yolks still soft, about 3–4 minutes. For over-easy: cook 2–3 minutes until whites set, carefully flip each egg with a spatula, and cook 15–30 seconds more for runny yolks. Remove eggs to the plate with home fries and bacon.

    Make toast

    While eggs cook (or in a toaster beforehand), toast 2 slices of bread until golden. Spread 1 tbs butter over the hot toast so it melts. If you prefer, toast bread in the hot skillet for 30–60 seconds per side in a little butter for extra flavor.

Plating & final assembly

    Arrange the home fries on the plate, add bacon slices alongside, place the two eggs on top or next to the fries, and serve toast on the side. Optionally garnish fries or eggs with a pinch more parsley and an extra grind of black pepper. Serve immediately.
