Jalapeño Cilantro Lime Vinaigrette

    Make the marinade

    In a shallow dish or zip-top bag combine 2 tbs olive oil, 1 tbs Worcestershire, 1 tbs soy sauce, 1 tbs fresh lime juice, minced garlic, 1 tsp kosher salt and 1 tsp black pepper. Whisk or shake until combined.

    Marinate the steak

    Place the 680 g steak in the dish or bag and coat thoroughly with the marinade. Refrigerate and marinate for at least 30 minutes and up to 4 hours. Remove steak from fridge 20 minutes before cooking to come toward room temperature.

    Preheat and grill/pan-sear

    Heat a grill or heavy cast-iron skillet to high (grill ~450–500°F / skillet until smoking hot). Brush any excess marinade off the steak and lightly oil the grill grates or pan. For a 2–2.5 cm (3/4–1 inch) steak cook about 4–5 minutes per side for medium-rare (internal 130–135°F / 54–57°C); adjust time for thickness and preferred doneness.

    Rest and slice

    Transfer steak to a cutting board and let rest uncovered for 8–10 minutes. Slice thinly across the grain into bite-sized strips for the salad.

Jalapeño Cilantro Lime Vinaigrette

    Prepare the vinaigrette

    In a blender or food processor combine 1 whole seeded jalapeño, 0.5 cup packed chopped cilantro, 60 ml fresh lime juice, 1 tbs honey and 1 tsp Dijon mustard. Pulse until roughly blended. With the motor running, slowly stream in 80 ml olive oil until emulsified. Season to taste with 0.5 tsp kosher salt and 0.25 tsp black pepper. Taste and adjust honey, lime or salt as needed. Keep chilled until assembly.

    Prep produce

    Halve 1.5 cups cherry tomatoes. Thinly slice 1 apple and toss the slices immediately with 1 tsp lime or lemon juice to prevent browning. Halve and slice 2 avocados just before assembly so they remain bright.

    Assemble greens

    Place 6 cups mixed salad greens in a large bowl or divide among 4 plates.

    Dress the salad

    Drizzle the jalapeño cilantro lime vinaigrette over the greens (start with about 3–4 tbs per plate or ~60–80 ml total for 4 servings) and toss gently to coat. Add more vinaigrette as desired — you should be able to coat the greens without making them soggy.

    Add toppings and steak

    Arrange apple slices, halved cherry tomatoes and avocado slices over the dressed greens. Sprinkle 0.75 cup crumbled blue cheese evenly across the salads. Top each salad with an even portion of the sliced rested steak.

    Finish and serve

    Give a final grind of black pepper over each plate and serve immediately so avocado stays fresh and steak is warm.
