Make the marinade
In a medium bowl whisk together 0.25 cups olive oil, 2 tbs Worcestershire sauce, 2 tbs low-sodium soy sauce, 1 tbs Dijon mustard, 1 tbs packed brown sugar, 3 minced garlic cloves, 1 tbs fresh lemon juice, 2 tsp kosher salt and 1 tsp freshly ground black pepper until smooth.

Marinate the steaks
Place 4 pub steaks in a resealable bag or shallow dish and pour the marinade over them, ensuring each steak is coated. Seal or cover and refrigerate for at least 30 minutes and up to 2 hours. (If short on time, 30–45 minutes will still impart good flavor.)

Bring to room temperature
Remove steaks from the refrigerator about 30 minutes before cooking so they come closer to room temperature. This promotes even cooking.

Grill the steaks
Preheat a grill or cast-iron pan to medium-high (about 400–450°F / 205–230°C). Remove steaks from marinade and pat lightly dry with paper towels. Oil the grill grates or skillet. Grill steaks 3–6 minutes per side depending on thickness for medium-rare (internal temp ~130–135°F / 54–57°C). Adjust time for preferred doneness. While cooking, do not press down on the steaks.

Finish and rest
During the last minute of cooking, place 2 tbs unsalted butter on top of the steaks to melt and baste. Transfer steaks to a plate, tent loosely with foil, and rest 5–10 minutes before slicing against the grain.

Pan-fry the potatoes
In a large skillet over medium-high heat add 2 tbs olive oil and 2 tbs unsalted butter and heat until shimmering. Add the drained potatoes in a single layer (work in batches if necessary) and let cook undisturbed 4–6 minutes to develop a golden crust. Flip/stir occasionally to brown on multiple sides, about 12–18 minutes total.

Add aromatics and season
When potatoes are partly crisp and golden, push them to the side and add 1 diced yellow onion and 1 diced red bell pepper. Cook 3–4 minutes until softened, then stir everything together. Season with 1 tsp smoked paprika, 1 tsp crushed/dried rosemary (or 1 tsp fresh), 1 tsp kosher salt and 0.5 tsp black pepper. Cook 1–2 more minutes to marry flavors.

Finish with parsley
Remove from heat, stir in 2–3 tbs chopped fresh parsley, and taste-adjust salt and pepper. Keep warm until plating.

Cook eggs to order
Heat a nonstick skillet over medium-low and add 2 tbs unsalted butter or neutral oil. For sunny-side or fried eggs, crack eggs (8 large for 4 servings, 2 each) into the pan, season with 0.5 tsp kosher salt and 0.25 tsp black pepper distributed across eggs, and cook gently until whites are set but yolks remain runny (about 2–3 minutes). For over-easy, flip carefully and cook an additional 15–30 seconds. Keep eggs warm on a plate while finishing steaks if needed.
