Prepare greens
Rinse the mixed greens in cold water, spin or pat very dry with paper towels or a salad spinner. Excess moisture will dilute the dressing and make the salad soggy.

Smoked turkey
If your smoked turkey is cold from the refrigerator, slice it thinly (1/8–1/4"). For a warm option, gently reheat slices in a skillet over medium-low heat for 2–3 minutes per side until warmed through; transfer to a plate to rest.

Avocado
Halve and pit each avocado. Slice each half into 6–8 slices (or dice if preferred). To prevent browning, toss slices lightly with the optional 1 tablespoon lemon juice.

Tomatoes and onion
Halve the cherry tomatoes. Thinly slice the red onion (into rings or half-rings). If you want a milder onion flavor, soak the slices in cold water for 5 minutes then drain and pat dry.

Blue cheese
Crumble the blue cheese and set aside in a small bowl for easy scattering across the salad at assembly.
Dressing

Make the white balsamic vinaigrette
In a small bowl or jar, combine 4 tbs white balsamic vinegar, 1 tbs Dijon mustard, 1 tbs honey, 1 minced garlic clove, 1 tbs lemon juice (optional), 1 tsp kosher salt and 1/2 tsp black pepper. Whisk while slowly drizzling in 6 tbs extra-virgin olive oil until the dressing emulsifies and thickens slightly. Taste and adjust salt, pepper, or honey for balance. (Alternatively, combine ingredients in a jar, close, and shake vigorously.)

Toss greens lightly
Place the dried mixed greens in a large bowl. Add about 3 tablespoons of the vinaigrette (reserve the rest for finishing) and toss gently until the leaves are lightly coated. Avoid overdressing.

Arrange the salad
Transfer the dressed greens to a large serving platter or divide among 4 individual plates. Arrange the smoked turkey slices, chopped bacon, quartered eggs, avocado slices, halved cherry tomatoes, and sliced red onion in rows or groups on top of the greens (classic Cobb-style presentation). Scatter the blue cheese crumbles over the top.

Finish and season
Drizzle remaining vinaigrette over the arranged toppings as desired. Finish with a few grinds of fresh black pepper and salt to taste. Serve immediately so avocado stays fresh and bacon remains crisp.

Notes (optional)
If you do not have pre-smoked turkey, you can use roasted turkey breast or quickly flavor slices with smoked paprika and a light sear; true smoking requires more time. Leftover components (dressing, bacon, turkey) keep refrigerated for 2–3 days; toss avocados just before serving.
