1. Cook the bacon

Place a medium skillet over medium heat. Add the 3 bacon slices in a single layer and cook until browned and crisp, about 6–8 minutes, flipping once. Transfer bacon to a paper towel–lined plate and reserve 1 tablespoon of the rendered bacon fat in the pan for flavor (leave the rest in the paper towel or discard).

2. Heat the ham

Wipe the skillet lightly if there's excessive fat but keep about 1 tsp of bacon fat or use a touch of oil. Return the pan to medium heat and warm the 2 ham slices for 30–60 seconds per side until just warmed and slightly browned. Keep warm on a plate covered with foil.

3. Par-cook the potatoes

Put diced potatoes (450 g) in a pot and cover with cold water by 1 inch. Add a pinch of salt and bring to a boil over high heat. Reduce to a simmer and cook until just fork-tender, about 7–9 minutes. Do not overcook. Drain well and let steam-dry for 1–2 minutes.

4. Sauté fries and onion

While potatoes cook, heat a large skillet over medium-high heat and add 2 tbsp olive oil plus 1 tsp reserved bacon fat (if using). When shimmering, add the drained potatoes in a single layer (work in batches if necessary) and let them sit undisturbed 2–3 minutes to develop a crust. Toss or turn and add the 1/2 cup diced onion. Continue sautéing, stirring occasionally, until potatoes are golden and crisp on edges, about 8–10 minutes total.

5. Season home fries

Lower heat to medium, sprinkle the potatoes and onions with 1 tsp kosher salt, 1/4 tsp black pepper, and 1/2 tsp paprika. Stir to combine and cook 1–2 more minutes to meld flavors. Remove from heat and stir in 1 tbsp chopped fresh parsley if using. Keep warm until plating.

6. Prep and cook eggs

Heat a nonstick skillet over medium-low. Add 1 tbsp unsalted butter and 1/2 tbsp vegetable oil; swirl to coat. Crack 2 large eggs into a bowl, season with 1/2 tsp kosher salt and 1/4 tsp black pepper, and beat lightly until blended. Pour eggs into the skillet and let them set at the edges briefly. Using a spatula, gently scramble with broad strokes until just set but still moist — or cook to your preferred doneness. Total cook time about 2–3 minutes for softly scrambled eggs.

7. Melt cheese

When eggs are nearly done, shape them into a compact oval (for easier sandwich stacking). Place 1 slice American cheese on top of the eggs, cover the pan for 20–30 seconds to melt the cheese, then transfer eggs to a plate and keep warm.

8. Toast the bun

Split the Viro's bun or English muffin and spread 1 tbsp unsalted butter on the cut sides. Return to a clean skillet or griddle over medium heat and toast cut-side down until golden brown and crisp, about 1–2 minutes. Remove and keep warm.

9. Optional spread

If using, spread 1 tbsp mayonnaise on the bottom or top half of the toasted bun. This adds moisture and tang and helps keep the sandwich together.

Assembly

10. Assemble the Mega Egg Sandwich

On the bottom half of the toasted bun, place the warmed ham slices, then the crisp bacon strips (slightly overlapping). Add the cheesy scrambled eggs on top of the bacon.

11. Finish and serve

Cap with the top bun. Serve immediately with a generous portion of home fries on the side and ketchup or hot sauce (2 tbsp) if desired. If plating for later, wrap the sandwich tightly to retain heat.
