    Parboil and drain

    Place cubed potatoes in a medium pot and cover with the 1000 ml water and a pinch of salt. Bring to a boil, then simmer 6–8 minutes until just tender but not falling apart. Drain thoroughly and let steam-dry for 2–3 minutes in the colander.

    Sauté aromatics

    While potatoes parboil, heat a large heavy skillet (preferably cast-iron) over medium-high heat. Add 2 tbs vegetable oil. When oil shimmers, add diced onion and red bell pepper and sauté 3–4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant, then transfer vegetables to a bowl and set aside.

    Crisp the potatoes

    Return skillet to medium-high heat and add 1 tbs unsalted butter. When butter is melted and foaming, add the drained potatoes in a single layer (it’s okay if they touch — don’t overcrowd; cook in batches if needed). Let potatoes cook undisturbed 3–4 minutes to form a brown crust. Toss or flip and continue cooking 4–6 minutes, pressing slightly to increase browning, until most pieces are golden and crisp.

    Finish and season

    Return the sautéed onion/pepper mix to the skillet with the potatoes. Sprinkle paprika, onion powder, 1 tsp kosher salt, and 1/2 tsp black pepper over the potatoes. Toss to combine and cook 1–2 more minutes to meld flavors. Stir in 1 tbs chopped fresh parsley, taste and adjust seasoning as needed. Keep potatoes warm on low while you make gravy and eggs.

Brown Gravy

    Make a roux

    In a small saucepan, melt 1 tbs unsalted butter over medium heat. Whisk in 2 tbs all-purpose flour and cook, whisking constantly, 1–2 minutes until the mixture turns a light golden brown and loses its raw flour smell (this cooks out the raw flour flavor and gives the gravy depth).

    Add broth and season

    Gradually whisk in 1 cup beef (or vegetable) broth until smooth. Add 1 tsp Worcestershire sauce, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer, whisking, and cook 2–3 minutes until thickened to a smooth brown gravy consistency. If gravy becomes too thick, whisk in up to 2 tbs additional broth or water to reach desired consistency. Keep warm on very low heat; taste and adjust seasoning.

Eggs & Cheese

    Fry the eggs

    Heat a nonstick skillet over medium-low and add 1 tbs unsalted butter. Crack 2 eggs into the skillet, spacing them apart. For sunny-side-up: cook gently 3–4 minutes until whites are set but yolks still runny; to cook over-easy: cook until whites set, flip carefully, and cook 15–20 seconds more. Season eggs with salt and pepper to taste.

    Melt cheese over fries

    Divide the warm home fries onto the serving plate. Immediately top the fries with the 2 slices of white cheese; the residual heat will begin melting them. If you prefer fully melted cheese, place the plate under a hot broiler for 30–60 seconds or cover the skillet with a lid for 30–45 seconds until cheese is melted.

    Assemble and serve

    Place the cooked eggs on top of the melted cheese and home fries. Spoon 1/3–1/2 cup of the warm brown gravy alongside or over one side of the fries (reserve a little to pour over eggs if desired). Garnish with sliced fresh chives and an extra sprinkle of black pepper. Serve immediately.
