Method
Meat & fillings (cook first)

Cook bacon
Heat a medium (10-inch) skillet over medium heat. Add the 2 bacon slices and cook 6–8 minutes, turning occasionally, until browned and crisp to your liking. Transfer bacon to a paper towel-lined plate and reserve 1 tablespoon of the rendered bacon fat in the skillet (discard excess or save for fries). Once cool, chop or crumble the bacon into bite-sized pieces.

Cook sausage
In the same skillet over medium heat, add the 2 sausage links. Cook, turning occasionally, about 8–10 minutes until browned and cooked through (internal temperature 160°F / 71°C). Transfer to a cutting board, slice or crumble into 1/2-inch pieces. If using pre-cooked sausage, brown quickly for 2–3 minutes to warm.

Par-cook potatoes (optional but faster/crispier)
If you prefer crisp home fries, microwave the 1.5 cups diced russet potato in a microwave-safe bowl with 1–2 tablespoons water, covered, for 3–4 minutes until just tender but not mushy. Drain and pat dry. (If you skip this, raw potatoes will take longer — increase sauté time by 6–8 minutes.)

Sauté home fries
Heat a separate large skillet over medium-high heat and add 1.5 tbs neutral oil. When shimmering, add the diced potato in a single layer (work in batches if needed). Cook undisturbed 3–4 minutes to develop a golden crust, then stir. Add the 0.25 cups diced onion and 0.25 cups diced green bell pepper. Continue to cook, stirring occasionally, 6–8 minutes until potatoes are golden and tender. Season with 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp smoked paprika. Taste and adjust seasoning. Keep warm in the skillet on very low heat or transfer to a warm plate.

Prep egg mixture
In a bowl whisk together 3 large eggs, 2 tbs milk, 0.25 tsp salt and 0.25 tsp black pepper until blended and slightly frothy. This gives a tender omelet.

Heat pan and cook eggs
Use a clean 8–10 inch nonstick or well-seasoned skillet and heat over medium-low. Add 1 tbs unsalted butter and swirl to coat. When butter foams but does not brown, pour in the egg mixture. Let eggs set undisturbed for about 20–30 seconds, then gently pull edges toward center with a spatula allowing uncooked egg to flow underneath. Continue until eggs are mostly set but surface still slightly custardy, about 1–2 minutes total.

Add fillings and cheese
Evenly distribute the chopped bacon, sliced/crumbled sausage, and diced ham over one half of the omelet (use all prepared meat or adjust to taste). Sprinkle 0.5 cups shredded cheddar/Jack cheese over the fillings. Let sit 30–60 seconds to melt the cheese.

Fold and finish
Carefully fold the empty half of the omelet over the filled half using a spatula. Cook another 15–30 seconds for a slightly runny center, or 45–60 seconds for firmer set. Slide the omelet onto a plate. Garnish with 1 tsp chopped fresh parsley if using.
