Prepare aromatics
Peel and finely grate or mince the ginger (about 1 tablespoon) and mince the 2 garlic cloves.
Finish with miso
If using miso paste, ladle about 1/2 cup of the hot broth into a small bowl, whisk in the miso until smooth, then whisk that back into the pot. Taste and adjust salt and pepper. Keep the broth warm on low while you assemble other components.
Rice & Noodles
Heat rice
If your cooked rice is cold, reheat it: place 3 cups hot or warmed short/medium-grain rice in a low oven (250°F / 120°C) covered, or microwave covered for 1–2 minutes until hot. Divide rice among 2–3 large bowls (about 1 to 1 1/2 cups rice per bowl).
Cook noodles
Bring a separate pot of water to a rolling boil. Add the ramen noodles and cook according to package instructions (fresh: 2–3 minutes; dried: 4–5 minutes) until just tender. Drain briefly, rinse under warm water to remove excess starch, and divide the cooked noodles on top of the rice in each bowl (or keep slightly separate depending on desired presentation).

Prepare protein
If using chicken thighs: season lightly with salt and pepper. Heat a skillet over medium-high heat with 1 tsp neutral oil and sear the thighs 3–4 minutes per side until golden and cooked through (internal 165°F / 74°C). Let rest 5 minutes, then slice thinly. If using tofu: press and cube, toss with 1 tsp soy sauce and pan-fry in 1 tbsp oil until golden on all sides.
Slice scallions
Thinly slice 2 scallions on the diagonal for garnish.
Assemble protein & toppings
Arrange the sliced chicken or tofu, sautéed mushrooms and greens, corn, and halved eggs over the rice and noodles in each bowl. Sprinkle with sliced scallions, toasted sesame seeds, nori strips, and crispy fried shallots or tempura crumbs. Add a few drops of chili oil or sriracha if you like heat.
Final Assembly & Serving
Storage: Refrigerate leftover broth separately up to 3 days. Keep cooked rice and toppings separate and reheat gently to avoid soggy textures.
