Method
Cheese Curds Prep
Pat the cheese curds dry with paper towels; remove any excess moisture so breading adheres. Season lightly with 1/4 tsp coarse kosher salt and 1/8 tsp black pepper, tossing gently to coat.
Place the curds in the refrigerator on a tray for 15–20 minutes to chill; this helps minimize melting during frying.
Breading Station Setup
Arrange three shallow bowls: Bowl 1 - combine all-purpose flour, cornstarch, baking powder, smoked paprika, onion powder, garlic powder, and cayenne; whisk to combine. Bowl 2 - whisk eggs, buttermilk, and Worcestershire sauce until smooth. Bowl 3 - place fine breadcrumbs.
Working in small batches, dredge each chilled curd first in the seasoned flour mixture, shaking off excess, then dip into the wet batter, letting excess drip back into the bowl, then press into breadcrumbs to coat thoroughly. For an extra-secure crust: repeat the wet batter and breadcrumb step for a double coat. Place breaded curds on a parchment-lined tray and return to the refrigerator for 10–15 minutes to firm up the coating.

Pour oil into a medium heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (roughly 4 cups for a 3–4 quart pot). Heat the oil to 350°F (175°C). Use a thermometer for accuracy; maintain 325–350°F while frying.
Fry the breaded curds in small batches (6–8 pieces depending on pot size) so they don’t crowd. Carefully lower each piece into the oil using a slotted spoon or spider. Fry for 60–90 seconds, turning once, until the crust is golden brown and crisp. Do not over-fry; curds will melt internally but breading should be golden.
Remove fried curds to a wire rack set over a sheet pan (not directly on paper towels) to drain and stay crisp. Lightly sprinkle with additional kosher salt while hot if desired. If you doubled the coating, reduce frying time slightly to avoid over-browning; if single coated, check earlier.
Keep finished curds warm in a preheated 200°F (95°C) oven on the wire rack if frying multiple batches; do not stack.
