Method
Brisket & Glaze
1. Season brisket
Pat the brisket dry with paper towels. Mix kosher salt, coarse black pepper, garlic powder, and smoked paprika. Rub the spice blend evenly over all sides of the brisket. Let sit at room temperature for 30 minutes or refrigerate up to overnight and bring back to room temp before cooking.
3. Smoke or oven-roast brisket
Preheat smoker to 225°F (107°C). Place the brisket fat-side up on the smoker and cook until the internal temperature reaches about 195–203°F (90–95°C), about 1.5–2 hours per pound — for a 3 lb brisket plan ~4–6 hours. If using an oven, set to 275°F (135°C) and roast on a rack in a roasting pan with a small water pan until the same internal temp. Wrap in foil (Texas crutch) after reaching ~165°F if you want to speed through the stall and keep moist.
4. Make the sesame-ginger BBQ glaze
While the brisket cooks or during its final hour, combine soy sauce, hoisin, sesame oil, brown sugar, grated ginger, minced garlic, rice vinegar, and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat. Whisk cornstarch into 1–2 tablespoons cold water to make a slurry, then whisk into the simmering sauce to thicken slightly. Simmer 3–5 minutes until glossy and slightly thickened. Taste and adjust: more sugar for sweetness, more soy for salt, more vinegar for brightness. Keep warm.
5. Glaze and rest brisket
During the last 20–30 minutes of cooking, brush the brisket with the glaze every 10 minutes to build a sticky exterior. Once the brisket reaches target temperature, remove from heat, brush once more with glaze, and tent loosely with foil. Let rest 30–45 minutes to redistribute juices.
Pickled Matchstick Carrots & Garnishes
2. Quick-pickle carrots
In a small saucepan, combine 1 cup rice vinegar, 1 cup water, 2 tablespoons sugar, and 1 teaspoon kosher salt. Bring to a simmer to dissolve sugar and salt, then remove from heat. Place the matchstick carrots in a heatproof bowl or jar and pour the hot brine over them. Let cool to room temperature, then refrigerate at least 30 minutes (or up to overnight) to develop tang. Drain before assembling.
Sriracha Mayo
1. Mix sauce
In a small bowl, whisk together mayonnaise, sriracha, lime juice, sesame oil, and a pinch of salt until smooth. Taste and adjust sriracha for spiciness or lime for brightness. Refrigerate until ready to assemble.
Assembly & Bread
1. Warm and toast rolls
Preheat oven broiler or oven to 375°F (190°C). Split the hoagie rolls and lightly butter the cut sides if desired. Place cut-side up on a baking sheet and toast under the broiler or in the oven 2–4 minutes until lightly golden — watch carefully to avoid burning. Optionally sprinkle toasted sesame seeds on the buttered cut sides immediately after toasting.
2. Assemble sandwiches
Spread about 1–2 tablespoons sriracha mayo on each cut side of the hoagie. Layer 5–6 slices of glazed brisket per roll, slightly overlapping. Spoon 1–2 teaspoons of reserved glaze or pan jus over the brisket for extra moisture. Top brisket with a generous handful (about 1/4 cup) of drained pickled matchstick carrots, a few cilantro sprigs, and 4–6 jalapeño slices (adjust to taste). Close the roll and press gently.
3. Serve
Cut sandwiches in half if desired and serve immediately while brisket is warm. Provide extra sriracha mayo and glaze on the side for dipping.
