Make the mojito-style marinade
In a blender or food processor, combine fresh lime juice, fresh orange juice, packed mint leaves, cilantro, light brown sugar, minced garlic, chopped jalapeño, white rum (if using), olive oil, smoked paprika, ground cumin, salt, and black pepper. Pulse until mostly smooth but with some herb texture remaining (about 10–15 seconds).
Marinate the tenders
Place chicken tenders in a shallow dish or zip-top bag. Pour the marinade over the tenders, turning to coat. Refrigerate and marinate for 30 minutes to 2 hours (30 minutes for more intact texture; up to 2 hours for deeper flavor). Remove chicken from fridge 10 minutes before cooking to take the chill off.
Pat dry before cooking
Remove the tenders from the marinade, letting excess drip off. Pat them lightly with paper towel—this helps achieve a good sauté color. Reserve the remaining marinade (do not use raw marinade later without cooking).
Orange-Mango Marmalade
Prepare fruit
While chicken marinates, combine diced mango, chopped orange segments (or orange juice + zest), orange zest, granulated sugar, white wine vinegar, red pepper flakes (if using), and 2 tablespoons water in a small saucepan.
Cook marmalade
Bring mixture to a gentle simmer over medium heat, stirring occasionally. Reduce heat to low and cook until fruit breaks down and mixture thickens to a jammy consistency, about 10–12 minutes. Smash a few mango pieces with the back of a spoon for a slightly chunky texture. Taste and adjust seasoning: add a pinch more sugar for sweetness or a splash more vinegar for brightness. Remove from heat and set aside; it will thicken a bit more as it cools.
Spicy Indies Sauté Finish
Sear the chicken
Heat a large heavy skillet (cast-iron recommended) over medium-high heat until hot. Add 1 tablespoon neutral oil and swirl. Add marinated chicken tenders in a single layer, creating space between pieces—cook in batches if needed. Sear without moving until browned on the first side, about 2 minutes. Flip and cook until cooked through (internal temperature 165°F / 74°C) and nicely caramelized, about another 2–3 minutes depending on thickness. Transfer cooked tenders to a plate and tent loosely with foil to keep warm.
Build the spiced pan sauce
Lower heat to medium and add unsalted butter and remaining 1 tablespoon neutral oil to the same skillet. Add thinly sliced shallot and sauté 1–2 minutes until softened. Stir in grated ginger, red chili flakes, and curry powder and cook for 30 seconds until fragrant. Pour in the reserved marinade (about 2–3 tablespoons) and fish sauce; simmer briefly, scraping up browned bits from the pan, for 1–2 minutes to cook out rawness. Stir in lime zest.
Finish the chicken in the sauce
Return the seared chicken tenders to the skillet and spoon the spiced sauce over them, tossing to coat and warming the marmalade-like glaze—cook together for 1 minute so flavors meld. Taste a small piece and adjust with a pinch of salt or a squeeze of lime if needed.
To Serve
Garnish with fresh mint leaves and microgreens or cilantro sprigs. Serve with lime wedges on the side for extra brightness. Serve immediately while hot.
