Prepare ingredients
Crack the eggs into a medium bowl. Add the milk, salt, and pepper. Whisk vigorously until mixture is uniform and slightly frothy. Grate or shred the Cheddar-Jack cheese if not pre-shredded. Chop the cooked bacon into small pieces and set aside.
Heat the pan
Place a 9-10 inch nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and swirl to coat the pan. The butter should foam but not brown.
Cook eggs
Pour the egg mixture into the hot skillet. Let it sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, gently push the set edges toward the center while tilting the pan to allow the uncooked egg to flow to the edges. Continue this motion until the eggs are almost set but still slightly glossy on top, about 1½–2 minutes total.
Fold and finish
Using the spatula, carefully fold the empty half of the omelette over the filled half to create a semicircle. Let cook 20–30 more seconds to finish setting and ensure cheese is melted through. Slide the omelette onto a warm plate, seam-side down. Sprinkle chopped parsley or cilantro on top.

In a small bowl combine the quartered strawberries, halved grapes, and diced pineapple. Drizzle with the orange (or lemon) juice and honey if using. Gently toss to combine. Taste and adjust sweetness with a little more honey or juice if needed. Chill briefly while you prepare toast and serve alongside the omelette.
Cuban Toast
Preheat a skillet or griddle over medium heat. Spread the softened butter evenly on one side of each slice of Cuban bread. Sprinkle a light dusting of garlic powder on the buttered side if desired. Place the buttered side down on the hot skillet and toast until golden brown, about 1–2 minutes. Flip and toast the other side until lightly crisp, another 1 minute. Remove and slice on the diagonal. Serve hot with the omelette and fruit.
