Prepare batter

Place fresh or thawed corn kernels into a food processor or blender. Pulse until mostly smooth but still slightly textured—aim for a coarse purée rather than a completely smooth liquid (about 20–30 seconds).

Transfer the puréed corn to a medium bowl. Stir in the all-purpose flour, fine cornmeal (if using), granulated sugar, baking powder, and salt until evenly combined. Add the milk and melted butter and mix until you have a cohesive, scoopable batter. If batter seems very loose, let it rest 5 minutes to let cornmeal absorb moisture; if too thick, add up to 1 tablespoon more milk.

Heat a 10–12 inch nonstick or cast-iron skillet over medium heat. Add 1 tablespoon vegetable oil and swirl to coat. Reduce heat to medium-low (the arepa should cook slowly to develop color without burning).

Spoon about 1/3 to 1/2 cup of batter per arepa into the skillet for two medium arepas (adjust quantity if making a single larger cake). Use the back of the spoon to gently spread into a 4–5 inch round about 1/2–3/4 inch thick. Wipe spoon between cakes to shape the next one. Cook for 4–6 minutes on the first side, until edges look set and underside is golden-brown.

Flip carefully with a spatula and cook the second side 4–6 minutes more. If the exterior is browning too fast before interior sets, reduce heat and cover skillet for 1–2 minutes to finish cooking through. The arepa should be moist but not raw in center and have a tender, slightly caramelized crust.

Transfer cooked arepas to a plate and keep warm covered loosely with foil while you cook eggs and assemble.

Decide egg style: fried, scrambled, or poached. For two fried eggs: in a separate nonstick skillet, heat 1/2 tablespoon butter or oil over medium-low. Crack eggs into pan, season with 1/8 tsp salt and a pinch of pepper. Cook until whites are set and edges lightly crisp, 2–3 minutes for runny yolks, or flip for over-easy/medium and cook additional 30–90 seconds to desired doneness. For scrambled: whisk eggs with 1 tablespoon milk, season, cook low and fold until curds form. For poached: simmer water with 1 tsp vinegar and poach 3–4 minutes for runny yolks.

While eggs cook, crumbled or slice the white cheese. Taste and season cheese lightly if needed (many fresh cheeses are already salty).

Assemble: place arepas on plates. Top each arepa with half the cheese (about 0.5 oz per arepa if making two), then place one cooked egg on top. Season each egg with remaining salt and black pepper to taste and sprinkle chopped cilantro or scallions if using.

Serve immediately while arepas are warm and the cheese is slightly melty from contact with the hot cake and egg.
