Prepare cheeses
Remove all cheeses from the refrigerator 30–45 minutes before serving so they come to room temperature. This improves aroma and texture. About 10 minutes before assembling, unwrap cheeses and pat any surface moisture with a paper towel.

Slice and arrange cheeses
On a large wooden board or slate, place the three cheeses spaced apart. For Manchego, cut into 1 cm-thick wedges or small triangles for easy picking. For the blue cheese, break into irregular chunks with a knife to expose the creamy interior. For the Idiazabal, cut into thin slices or small wedges. Leave some whole pieces so guests can see and cut themselves if desired.

Prepare quince paste
Cut the quince paste (membrillo) into 1 cm-thick slices or small wedges. Place quince slices in a small dish or arrange them directly next to cheeses so each cheese has easy access to membrillo pairing.

Add accompaniments
Place crackers or thin slices of crusty bread in a separate stack on the board. Scatter Marcona almonds in a small pile. Arrange grapes or quartered fresh figs in a small cluster. If using honey, pour into a small dipping bowl. Tuck rosemary or thyme sprigs around the board for aroma and visual contrast.

Serving tips
Label cheeses if serving to guests or leave a small card with names. Provide at least one cheese knife per cheese (a soft-cheese spreader for blue, a firm knife for Manchego). Encourage guests to pair sweet quince paste with the sharper cheeses (blue or Manchego) and to drizzle a little honey on the blue or Idiazabal if desired. Replace breads/crackers as they are consumed.
