Method

Prepare glass & garnish

Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes, or fill with ice water while you prepare ingredients to chill it quickly. Empty the glass before building the cocktail.

Optional salt rim

If using smoked or flaky sea salt, rub a lime wedge around the glass rim and dip just the outer edge into the salt for a subtle savory accent. Set the glass aside.

Prepare pepper garnish

If using a blistered Padrón pepper, heat a small skillet over medium-high. Add the whole pepper and blister, turning until charred and softened (about 2–3 minutes). Remove and let cool slightly.

Build the cocktail

Fill the chilled glass with one large ice cube or plentiful cold ice.

Add 2 oz Sabor's Pimientos de Padrón gin into the glass.

Add 0.5 oz fresh lime juice to brighten the cocktail. If you prefer less acidity, use 0.25 oz.

Top gently with 4 oz chilled tonic water. Pour slowly over the back of a bar spoon if you want to preserve more carbonation and create a layered look.

Give the drink one gentle stir (1–2 revolutions) to integrate gin, lime and tonic without flattening the bubbles.

Garnish with a lime wheel or wedge on the rim and place the blistered Padrón pepper on top of the ice or perched on the rim for aroma. If using salt rim, ensure garnish does not dislodge it.

Optional: For an aromatic finishing touch, gently slap the lime peel over the drink to express oils, or rest the peel on the surface.

Serve

Serve immediately while tonic is effervescent. Advise guests to sip and, if desired, nibble the pepper as a savory companion.
