Make the dough
In a large bowl whisk together 2 cups all-purpose flour, 1/2 tsp baking powder and 3/4 tsp salt until evenly combined.

Incorporate fat and water
Add 2 tablespoons vegetable oil and 3/4 cup warm water. Mix with a fork until the dough comes together, then use your hands to knead in the bowl for 1–2 minutes until smooth and slightly elastic. If the dough is sticky, add a tablespoon of flour; if dry, add 1–2 teaspoons water.

Rest the dough
Divide the dough into 8 equal portions (about 2 tablespoons each). Roll each portion into a ball and cover with a clean towel or plastic wrap. Let rest at room temperature for 20–30 minutes to relax the gluten, which makes rolling easier.

Roll tortillas
On a lightly floured surface, using a rolling pin, roll each ball into a thin circle about 6–7 inches (15–18 cm) in diameter. Keep rolled tortillas covered with a towel to prevent drying.

Cook tortillas
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Cook each tortilla 30–45 seconds on the first side until brown spots appear and the surface puffs slightly; flip and cook 20–30 seconds more. Transfer cooked tortillas to a clean kitchen towel and wrap to keep warm and pliable. Repeat with remaining tortillas.

Sauté aromatics
Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1/2 cup finely chopped yellow onion and sauté 4–5 minutes until translucent. Add 2 teaspoons minced garlic and cook 30–45 seconds until fragrant.

Toast spices
Stir in 1 teaspoon ground cumin, 1 teaspoon smoked paprika and 1/2 teaspoon chili powder. Cook 20–30 seconds to bloom the spices, stirring constantly so they don’t burn.

Brown the meat
Add 12 oz lean ground beef (or turkey) to the skillet. Break it up with a spoon and cook 6–8 minutes until no longer pink and lightly browned.

Finish the filling
Stir in 1 tablespoon tomato paste and cook 1–2 minutes to caramelize. Add 2 tablespoons chopped fresh cilantro, 1 tablespoon fresh lime juice, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook another minute, taste and adjust seasoning. Remove from heat and keep warm.
Assemble & Serve

Fill tortillas
Warm tortillas briefly if needed. Spoon 2–3 tablespoons of the Sabor filling into the center of each tortilla. Top with a sprinkle of shredded cheese if using.

Add toppings
Add optional toppings: dollops of sour cream, sliced avocado or guacamole, pickled jalapeños and a squeeze of lime. Fold and serve immediately.

Storage
Store leftover cooked tortillas wrapped in foil or in an airtight container in the refrigerator for up to 3 days. Keep the filling in a sealed container for up to 3 days and reheat in a skillet or microwave until hot.
