Prep

    Chill glass

    Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you mix to ensure the drink stays bright and cold.

    If using, make a lime twist by cutting a thin strip of zest from a lime and set aside. Prepare a thin lemon wheel for garnish and pick a fresh thyme sprig.

Mixing

    Build and balance

    Fill a mixing glass or shaker with ice (about 1 cup). Add 2 oz Pentire Seaward, 0.5 oz fresh lime juice, 0.25 oz fresh lemon juice and 0.25 oz simple syrup. Add 2 dashes orange bitters. Stir gently for 10–12 seconds to chill and slightly dilute the spirit.

    Assemble

    Remove the chilled glass from the freezer or discard ice water and fill the glass with fresh ice. Strain the stirred Pentire Seaward mixture into the glass over the fresh ice.

    Top with tonic

    Carefully top with 4 oz chilled premium tonic water. Pour slowly over the back of a spoon or down the inside of the glass to preserve carbonation and create a clear, bright layer.

Garnish & Finish

    Gently slap the thyme sprig between your palms to release aromatics and place it on the surface of the drink beside the lemon wheel. Float the lemon wheel on top or rest on the rim. If using, twist the lime zest over the drink to express oils and drop it in or rest on the rim.

    Serve immediately with a short stirring straw. Encourage sipping slowly so the citrus and coastal botanicals of Pentire Seaward remain bright and the tonic stays effervescent.
