    Chill glass

    Place a large wine glass or copa in the freezer for 5–10 minutes or fill with ice water while you prepare ingredients to chill the glass.

    Build base

    Remove the glass from the freezer and discard any ice water. Add one large ice cube or a small handful of large cubes to the glass to keep dilution low.

    Measure and add spirits

    Pour 1.5 oz Pentire Coastal Botanical spirit into the glass, then add 0.5 oz fresh grapefruit juice and 0.25 oz fresh lemon juice. If you prefer a touch more sweetness, add 0.25 tsp simple syrup.

    Add sparkling components

    Gently pour 4.5 oz premium dry tonic water into the glass, taking care to pour slowly down a bar spoon or against the glass to preserve effervescence. Top with 1.5 oz dry sparkling wine (Prosecco or Cava). Stir once gently with a bar spoon (2–3 slow turns) to integrate without flattening the bubbles.

    Adjust and finish

    Taste briefly and adjust: add an extra 0.25 oz grapefruit juice for more fruit lift or 0.25 tsp simple syrup if you want sweeter. Keep changes minimal to preserve botanical balance.

Garnish & Aromatics

    Express oils from grapefruit peel: hold the peel over the finished drink, skin-side down, and give it a quick twist to spray the oils across the surface. Run the peel around the glass rim and drop it into the drink.

    Lightly slap the herb sprig between your palms or fingers to wake its aromatics, then place it upright in the glass so the aroma sits above the cocktail.

    Optional coastal note: rest a small strip of dried seaweed (nori) on the rim or float a narrow piece on the surface for a subtle savory, briny aroma. Alternatively use a thin strip of lemon zest.

    Serve immediately with a short stirring straw so the drinker can re-integrate before sipping.
