Prepare glass
Chill a highball or Collins glass by filling with ice and setting aside while you prepare the drink (about 2 minutes). Discard the chilling ice before building the cocktail.

Add the Pentire Adrift to a mixing glass or directly into the chilled serving glass.

Add fresh lime juice and dry vermouth (if using) to the spirit.

Stir the spirit, lime, and vermouth briefly (6–8 seconds) if mixing in a mixing glass to combine and slightly chill. If building in the serving glass, give a gentle stir with a barspoon after adding tonic.

Add the large ice cubes to the serving glass (or replace the chilling ice with fresh large cubes).

Pour the chilled tonic water slowly down the side of the glass to preserve effervescence and give the drink a gentle top-up until the tonic measures approximately 4 oz.

Add the teaspoon of prepared sea salt solution: drop it in and stir gently once to incorporate. Taste and adjust—if you prefer a more pronounced mineral note, add another 1/4 tsp and stir gently.

Give the full drink a gentle single stir (4–6 rotations) to combine without flattening the tonic.

Express the oils of the lime wheel over the drink by holding it skin-side down and giving it a quick squeeze over the surface, then rub the rim of the glass with the lime if desired.

Place the lime wheel on the rim or float it on top of the drink.

Garnish with a sprig of samphire or sea fennel/dill tucked into the drink to add a coastal aromatics. Serve immediately.
