Infuse Saffron & Warm Dairy

Bloom saffron
Place saffron threads in a small heatproof bowl and pour the hot water over them. Let sit 10–15 minutes to extract color and aroma.

In a medium saucepan, combine the whole milk and heavy cream. Warm over medium heat until small bubbles form at the edges (do not boil), about 5–7 minutes. Stir occasionally to prevent a skin from forming.

Once warm, add the bloomed saffron (including liquid) to the milk/cream and remove from heat. Cover and let steep for 20–30 minutes to maximize saffron flavor and color.
Prepare Custard Base

In a mixing bowl, whisk the egg yolks with the granulated sugar until pale and slightly thickened, about 2–3 minutes.

If using cornstarch for extra stability, whisk it with the sugar and yolks until evenly incorporated.

Gradually pour the tempered yolk mixture back into the saucepan with the remaining milk, stirring constantly. Cook over medium-low heat, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens slightly and coats the back of the spoon (170–175°F / 77–80°C), about 5–8 minutes. Do not let it boil.

Remove the saucepan from heat. Stir in the honey, fine sea salt, and vanilla extract until fully incorporated. Taste and adjust honey/salt if needed. If you used cornstarch, ensure there are no lumps by whisking vigorously.
Chill & Churn

Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits and any remaining saffron threads (or leave some threads for visual effect). This also yields a silkier texture.

Place plastic wrap directly on the surface of the custard to prevent a skin from forming. Cool to room temperature for about 30 minutes, then refrigerate until thoroughly chilled, at least 4 hours or preferably overnight.

When the custard is fully chilled, churn it in your ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency, usually 20–30 minutes depending on the machine.
Harden & Serve

Transfer the churned ice cream to a shallow lidded container. Press a piece of parchment directly on the surface to minimize ice crystals, then cover and freeze until firm, about 4 hours.

To serve, let the ice cream sit at room temperature for 3–5 minutes to soften slightly. Scoop into bowls or cones.
