Arrange cecina
Remove the cecina slices from the refrigerator and allow them to sit at room temperature for 10 minutes so the fat and aroma become more pronounced. On a large serving platter or four individual plates, arrange 3 slices per person slightly overlapping in a single layer.

Prepare dressing
In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice and lemon zest until emulsified. Season with coarsely ground black pepper and a light pinch of flaky sea salt. Taste and adjust: the dressing should be bright and slightly peppery to complement the cured beef.

Using a spoon, lightly drizzle the olive oil–lemon dressing over each arranged portion of cecina. Aim for an even, light coating — about 1/2 tablespoon per serving — so the meat glistens but does not become oily.

Lightly sprinkle a few flakes of sea salt and a final crack of black pepper over the plated cecina. If using, add thin shavings of aged Manchego across the slices, place halved caperberries around the plate, and finish with a tiny drizzle (about 1/4 teaspoon per serving) of aged balsamic or Pedro Ximénez reduction for sweet-acid balance.
