Apricot & Habanero Almíbar (Simple Syrup)

    Soak & simmer

    Combine the chopped dried apricots, granulated sugar, and water in a small saucepan. Add the thinly sliced, seeded habanero. Bring to a low simmer over medium-low heat, stirring so the sugar dissolves. Maintain a gentle simmer for 8–10 minutes so the apricots soften and the habanero infuses — do not boil vigorously.

    Remove from heat and let the mixture steep for 15–20 minutes off the heat to develop flavor and control spice. If using lime zest, add it during the steep to lift the syrup's brightness.

    Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing gently on the solids to extract syrup but leaving most pulp behind. Taste the syrup; if it's too spicy, dilute with 1–2 tablespoons of warm water. Let cool completely to room temperature.

    Refrigerate the syrup in a sealed jar. Makes about 3/4 cup (enough for ~8–10 cocktails). Keeps up to 2 weeks refrigerated.

Cocktail Preparation

    Prepare the glass: rub a lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt or Tajín to coat. Set glass aside.

    In a cocktail shaker add the tequila blanco, fresh lime juice, apricot & habanero almíbar, and the optional Cointreau if using. Fill the shaker with ice (about 3/4 full).

    Shake vigorously for 10–12 seconds until well chilled (the shaker should feel very cold).

    Double-strain the cocktail into the prepared glass over fresh ice (for a rocks presentation) or neat into the chilled coupe. Double-straining removes any small bits of syrup or ice shards for a clean texture.

    Garnish with a lime wheel or wedge and, if desired, a very thin slice of habanero floated on top for aroma and visual contrast. Serve immediately.
