Prepare potatoes
Wash and scrub the russet potatoes. Leave the skin on for texture or peel if preferred. Cut each potato into even 1/3- to 1/4-inch sticks (matchstick fries). Rinse the cut potatoes in a large bowl of cold water to remove surface starch; then drain and transfer to another bowl of cold water and soak for at least 30 minutes (up to 2 hours) in the refrigerator.
Dry and parboil (optional for extra crispness)
After soaking, drain and pat the potato sticks completely dry with clean kitchen towels or paper towels. For extra crisp fries: bring a large pot of salted water to a simmer, add the fries and cook gently for 3 minutes, then drain and dry thoroughly. Alternatively skip parboil if short on time but ensure they are fully dry before frying.
First fry (blanch)
Pour about 1.5 liters of oil into a deep, heavy pot or deep fryer and heat to 300°F (150°C). Working in batches to avoid overcrowding, fry the dry potatoes for 4–5 minutes until softened and slightly pale but not browned. Use a slotted spoon to transfer fries to a wire rack or paper towel–lined baking sheet to drain and cool for 10 minutes.
Second fry (crisp)
Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–4 minutes until golden brown and crisp. Drain on a wire rack set over a baking sheet; immediately sprinkle with 2 teaspoons fine sea salt while hot to season.

Make truffle butter & oil sauce
In a small saucepan over low heat, melt the unsalted butter with the extra-virgin olive oil until just combined and warm (do not brown). Add the minced garlic and cook gently for 30–45 seconds until fragrant but not colored. Remove from heat and stir in the truffle oil, lemon zest, and freshly ground black pepper.
Toss fries with sauce
Place the hot drained fries in a large warmed bowl or on the baking sheet. Pour the warm truffle-butter mixture evenly over the fries and gently toss using tongs or spatulas to coat. While still hot, immediately sprinkle the grated Parmesan and chopped parsley over the fries. Toss again lightly so cheese clings to the fries and melts slightly from the residual heat.
Adjust seasoning & finish
Taste and add flaky sea salt to finish, if desired. If using, sprinkle the grated Pecorino Romano for an extra sharp hit. Serve immediately while hot and crisp so the truffle aroma is at its peak.
