Soften and whip

Let the goat cheese sit at room temperature for 15–20 minutes so it softens slightly. Place the goat cheese, 2 tablespoons milk or cream, 1 tablespoon olive oil, lemon zest, lemon juice, 1 teaspoon sea salt, and 1/2 teaspoon black pepper in a food processor or a medium bowl if using an immersion blender.

Blend or whip until smooth and airy, 30–60 seconds in a food processor or 1–2 minutes with an immersion blender, scraping down the sides once. Taste and adjust seasoning: add up to 1 additional tablespoon cream if too thick, or more lemon/salt to brighten. Transfer to a serving bowl and chill while preparing other components (or keep at room temperature for easier spreading).

Pickled Red Onions

Place thinly sliced red onion in a heatproof jar or bowl. In a small saucepan combine 1/2 cup apple cider vinegar, 1/2 cup water, 1 tablespoon sugar, 1 teaspoon kosher salt, 1/2 teaspoon peppercorns, and 1 bay leaf. Bring just to a simmer over medium heat, stirring until sugar and salt dissolve, about 2–3 minutes.

Pour the hot brine over the sliced onions, pressing them so they are submerged. Let cool to room temperature, then cover and refrigerate at least 30 minutes for quick pickles (best after 1 hour). Can be made up to 5 days ahead and stored refrigerated.

Cucumbers & Greens

Wash and dry the cucumber and garden greens thoroughly. If using English cucumber with waxy skin, you may peel alternately for appearance (optional). Using a mandoline or sharp knife, slice the cucumber into 1/8- to 1/4-inch rounds or half-moons if you prefer bite-sized pieces.

Place the mixed greens in a medium bowl and toss gently with the chopped dill and snipped chives. Dress lightly with a drizzle (about 1/2 tablespoon) of the extra-virgin olive oil from the finishing ingredients and a few drops of lemon juice. Season very lightly with salt and pepper — the pickles and capers are salty, so keep it restrained.

Assembly & Garnish

Arrange the serving: spread a generous spoonful (about 2–3 tablespoons) of whipped goat cheese onto each piece of toasted bread or crackers, or spread a larger amount in the center of a platter if serving as a composed salad.

Top the goat cheese with a few cucumber slices and a small nest of mixed garden greens. Scatter a few pickled red onion slices over the top, then sprinkle 1/2 tablespoon capers per serving across the plate or toasts.

Finish with a light drizzle of 1 tablespoon extra-virgin olive oil over the assembled portions, a final 1/2 teaspoon fresh lemon juice, and a small pinch of freshly ground black pepper. Garnish with additional dill and chives if desired.

Serve immediately so toast remains crisp. If plating as a shared platter, serve pickled onions chilled alongside and allow guests to add as much as they like.
