Method
Whipped Goat Cheese
Soften and combine cheeses
Let the goat cheese and softened cream cheese sit at room temperature for 10 minutes so they become easy to blend. Place both cheeses in the bowl of a food processor or a medium mixing bowl if using an immersion blender.
Add liquids and seasonings
Add the heavy cream, olive oil, lemon zest, lemon juice, honey, sea salt, black pepper and chopped thyme to the bowl with the cheeses.
Whip to smooth
Process the mixture in the food processor, scraping down the sides once or twice, until the mixture is very smooth and spreadable, about 1 to 2 minutes. If using a hand mixer or immersion blender, beat on medium-high until light and airy, 2 to 3 minutes. Scrape into a serving bowl, taste and adjust seasoning (add up to 1/4 tsp more salt or 1/2 tbs more honey if desired).
Chill briefly (optional)
Cover and chill the whipped goat cheese for 15–20 minutes to firm slightly; this improves spreadability and allows flavors to meld. Alternatively serve immediately at room temperature.
Accompaniments & Assembly
Assemble crostini
Spread about 1 to 1.5 tablespoons of the whipped goat cheese on each warm bread slice. Place a thin slice of Benton's country ham folded neatly on top of half the crostini (or serve ham on the side).
Garnish and finish
Drizzle each crostini lightly with the extra honey (about 1/2 tsp each), sprinkle a few flakes of sea salt, and finish with a small pinch of fresh thyme or an herb sprig. Arrange dressed garden greens on the serving platter alongside the crostini.
