Make lemon-honey syrup

Combine 0.5 cup honey and 0.5 cup hot water in a heatproof container and stir until honey is fully dissolved. While still warm, stir in 1 tsp lemon zest to infuse bright citrus oils. Let cool to room temperature, then strain out the zest. Transfer to a sealed bottle and refrigerate. Syrup will keep for up to 2 weeks.

Prepare garnish: cut a fresh lemon wheel or twist. If using a twist, express oils over the finished drink by pinching the peel over the glass.

Shake

Fill a cocktail shaker with ice. Add 2 oz Broker's Gin, 0.75 oz fresh lemon juice, and 0.75 oz lemon-honey syrup. Shake vigorously for about 12–15 seconds until the shaker is cold and well-chilled.

Strain & Top

Double-strain (or fine-strain) the shaken mixture into a chilled coupe or Nick & Nora glass, or into a rocks glass with fresh ice if preferred. Carefully top with 2 oz chilled Prosecco, pouring slowly to preserve effervescence.

Garnish & Serve

Garnish with the lemon wheel or twist. If using a twist, run it around the glass rim and drop it in or twist over the drink to release oils. Serve immediately while the Prosecco is lively.
