Chill glass and ingredients

Place a champagne flute and the bottle of Champagne (or sparkling wine) in the refrigerator for at least 30 minutes before serving so the drink is well chilled.

Pour 1/2 ounce (15 ml) of crème de cassis into the bottom of a chilled champagne flute. Use the measuring jigger to keep proportions accurate.

Slowly top with 4 ounces (120 ml) of chilled Champagne or dry sparkling wine. Pour gently down the side of the glass or over the back of a spoon to preserve effervescence and reduce foaming.

Do not stir. The liqueur will gently mix with the bubbles; stirring will flatten the Champagne.

Optional: Thread 2–3 fresh blackcurrants on a small cocktail pick and rest across the rim or drop them into the flute for a subtle fruit accent.

Optional: Express a lemon twist over the drink to release oils, then wipe the rim with the twist and drop it into the flute or lay it on the rim as garnish.

Serve immediately while very cold and effervescent.
