Juice grapefruit

Cut a red grapefruit in half and juice until you have 3 ounces of fresh juice. Strain through a fine mesh if you prefer a pulp-free drink.

Measure and chill

Measure the Campari, grapefruit juice, simple syrup, and lime juice. Chill glass in freezer for a few minutes or fill with ice to chill while you mix.

Mix & Serve

Fill a shaker with ice (about 3/4 full). Add 1.5 oz Campari, 3 oz fresh red grapefruit juice, 0.25 oz simple syrup, and 0.25 oz fresh lime juice.

Shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Discard chilling ice from the glass if used. Fill a highball or rocks glass with fresh ice (about 1 cup). Strain the shaken mixture into the prepared glass.

Top with about 1.5 oz club soda to give a light effervescence. Gently stir once with a bar spoon to combine.

Garnish with a grapefruit wedge or a grapefruit peel twist. If using, slap the rosemary sprig between your palms and place it on the drink for an aromatic note.

Serve immediately with a straw or without, enjoying the bittersweet, citrus-forward balance.
