Bring steak to temperature and season
Remove the 14 oz KC strip from refrigeration 45–60 minutes before cooking to allow it to come toward room temperature (internal temperature ~55–60°F / 13–16°C). Pat the steak very dry with paper towels. Evenly coat both sides and the edges with kosher salt and freshly ground black pepper (use approximately 1 1/2 tbsp kosher salt total and 1 tbsp black pepper).
Preheat pan and oven (if finishing in oven)
Preheat a heavy cast-iron skillet over high heat for 6–8 minutes until smoking hot. If you prefer finishing in the oven for even doneness, preheat oven to 400°F (204°C).
Sear the steak
Add 2 tablespoons neutral oil to the hot skillet and swirl to coat. Carefully place the steak in the pan away from you to avoid splatter. Sear without moving for 2 1/2–3 minutes until a deep brown crust forms. Flip and sear the other side 2–3 minutes. If the edges need contact to render fat, hold the steak on its fat edge with tongs for 30–45 seconds.
Baste for flavor and finish cooking
Reduce heat to medium. Add 2 tablespoons unsalted butter, the smashed garlic cloves, and thyme sprigs to the pan. Tilt the pan slightly and, using a large spoon, baste the melted butter over the steak continuously for 1–2 minutes while the internal temperature rises. For medium-rare target 125–130°F (52–54°C); for medium target 135°F (57°C). If the steak needs more time after searing to reach target temp, transfer the skillet to the preheated oven and roast for 3–6 minutes depending on thickness and desired doneness. Continue basting once removed from oven.
Rest the steak
Transfer the steak to a warm plate or cutting board and tent loosely with foil. Rest for 8–10 minutes to allow juices to redistribute and carryover cooking to finish. While resting, skim any fat from the pan and spoon a little of the flavored butter or pan jus over the steak if desired.
