Method
Preheat oven to 350°F (175°C). In a large bowl, cream the softened butter and granulated sugar together with a hand mixer or whisk until light and slightly fluffy, about 2 minutes. Add the egg yolk and vanilla extract and mix until combined. In a separate bowl, whisk the flour and salt, then add to the butter mixture and stir until a soft dough forms. If dough feels too dry, add 1/2 tsp water; if too sticky, add 1–2 tbsp flour.
Line a baking sheet with parchment. Roll the dough into small 1-inch balls (about 12–14 balls). Place balls 1 inch apart and gently flatten each to about 1/4-inch thickness using the bottom of a glass. Bake for 10–12 minutes, until edges are just set and bottoms are lightly golden. Remove to a wire rack and let cool completely (15–20 minutes).
Chocolate-dipped bites
Temper/ melt chocolate
Place chocolate chips and neutral oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring between each, until smooth (about 60–90 seconds total). Alternatively melt in a double boiler, stirring until glossy and smooth. Do not overheat.
Nutty caramel bites
Prepare caramel
If using soft caramels: place caramels and heavy cream in a small saucepan over low heat and stir until melted and smooth to form a thick pourable caramel (about 3–5 minutes). If using pre-made caramel sauce, warm slightly so it’s pourable but not runny.
Assemble nutty bites
Using a small spoon, put a small dab (about 1/2 tsp) of warm caramel onto the center of selected cookies. Immediately press a teaspoon of toasted chopped pecans into the caramel so they stick. Allow caramel to cool and set (10–20 minutes) at room temperature or refrigerate briefly (5–10 minutes).
Fruit & jam bites
Top with jam
Spoon about 1/2 tsp of berry jam onto the center of a selection of cookies and spread slightly, leaving a small border so the jam does not run off. If using fresh berries, halve small berries and press one half into the jam on each cookie as a garnish. Let set for a few minutes so jam adheres.
Citrus glaze bites
Make glaze
In a small bowl, whisk powdered sugar, lemon juice, and milk (or water) until smooth and pourable but thick enough to coat the back of a spoon. Stir in grated lemon zest.
Spoon about 1/2 tsp of glaze onto selected cookies and spread gently with the back of the spoon. Allow glaze to set at room temperature for 20–30 minutes.
Assembly & finishing
Add final touches
For variety, arrange cookies in groups: chocolate-dipped, caramel-nut, jam-topped, and citrus-glazed. Optionally sprinkle chopped toasted pistachios over glazed or jam cookies while topping is still tacky. Dust a few cookies lightly with cocoa powder for a chocolate-scented option. Let all finishes set before stacking or serving.
Storage
Store finished bites in an airtight container at room temperature for up to 3 days, or refrigerate up to 7 days (chocolate may bloom slightly in fridge). If refrigerated, bring cookies to room temperature 20 minutes before serving for best texture.
