Method
Prepare Filling
Cook beef or steak
If using raw ground beef: heat a medium nonstick skillet over medium heat. Add 1 teaspoon neutral oil (if not using lean) and the diced onion. Sauté 2–3 minutes until softened. Add the ground beef and cook, breaking up with a spatula, until no pink remains, about 5–7 minutes. If using pre-cooked chopped steak: warm briefly in the skillet with the onion 1–2 minutes to combine flavors. Drain any excess fat.
Stir in the taco seasoning, salt, and pepper. Cook 30–60 seconds until fragrant. Remove pan from heat and let mixture cool 3–5 minutes (so it won’t melt the cream cheese completely).
Transfer the meat and onions to a bowl. Add the softened cream cheese and shredded cheddar. Stir until evenly combined and slightly creamy. Taste and adjust seasoning if needed. The filling should be moist but not runny—add a tablespoon of shredded cheese or a touch more cream cheese if it seems dry.
Assemble Taquitos
Place about 2 tablespoons (roughly 1–2 tbsp depending on tortilla size) of the filling across the lower third of each tortilla in a thin log. Don’t overfill — for kids, use less to make small, easy-to-hold taquitos.
Tightly roll each tortilla around the filling and place seam-side down on a tray. Repeat with remaining tortillas and filling.
Cook Taquitos
Pan-fry (crisp exterior)
Heat a large nonstick skillet over medium heat and add 1–2 tablespoons oil, swirling to coat. Once hot but not smoking, add taquitos seam-side down, leaving space between them. Cook 2–3 minutes per side, rolling as needed with tongs so all sides become golden and crisp. Total cooking time about 6–8 minutes. Transfer to a paper towel-lined plate to drain any excess oil.
OR Bake (less oil)
Preheat oven to 425°F (220°C). Line a baking sheet with parchment and place taquitos seam-side down. Lightly brush or spray each taquito with oil. Bake 12–15 minutes, turning once halfway, until golden and crisp.
Let taquitos rest 1–2 minutes after cooking — they will be hot inside. For small children, allow cooling until lukewarm and cut into halves if desired.
Serve
Arrange taquitos on a plate. Serve with small bowls of mild salsa and sour cream or Greek yogurt for dipping. Sprinkle a little chopped cilantro on top if using. Store leftover taquitos in an airtight container in the refrigerator for up to 3 days; reheat in oven or air fryer to restore crispness.
