Method
Prepare Corn
Shuck and quarter
Remove husks and silk from each ear of corn. Trim a small slice from the stem end so the cob sits stable. Stand an ear vertically on the cutting board and carefully slice lengthwise into 4 even quarters to create 'ribs' (use a sharp chef’s knife; hold steady and cut through the kernels and cob). Repeat for all ears.
Blanch (optional - helps finish cooking)
Bring a large pot of salted water to a boil. Add the corn ribs and blanch for 2 minutes to slightly soften kernels. Immediately transfer corn to an ice bath to stop cooking, then drain. (If you prefer a raw-crisp finish, skip blanching and proceed to marinating/grilling — cooking time will be slightly longer.)
Marinate & Season
In a medium bowl, whisk together olive oil, melted butter, smoked paprika, ground cumin, garlic powder, salt, black pepper and lime juice. Brush or toss the corn ribs in the marinade so all sides are evenly coated. Let sit 10 minutes at room temperature to absorb flavors (or up to 30 minutes in the fridge).
Cook Corn Ribs
Grill method
Preheat grill to medium-high (about 400°F / 200°C). Oil the grates. Place corn ribs directly on the grill, cut-side down first, and cook 3–4 minutes per side until charred and tender, turning to get crosswise grill marks. Total grill time ~10–12 minutes. Brush with remaining marinade during cooking if desired.
Oven method
Preheat oven to 450°F (230°C). Arrange corn ribs cut-side up on a rimmed baking sheet lined with foil. Roast 12–15 minutes, then broil 2–3 minutes to get charred edges (watch closely). Rotate the pan if necessary for even browning.
Skillet method
Heat a large cast-iron or heavy skillet over medium-high heat and add a little oil. Place ribs cut-side down and press gently to maximize contact. Cook 3–4 minutes per side until deeply browned and tender, working in batches as needed.
Finish & Serve
Transfer hot corn ribs to a platter. While still warm, dust evenly with chili powder, sprinkle with grated cotija (or feta), and scatter chopped cilantro on top. Serve with lime wedges and optional hot sauce or crema on the side. Squeeze lime over each rib just before eating.
Serving suggestion: Arrange ribs standing or fanned on a board for easy grabbing — they make a shareable appetizer or a side to grilled meats.
