Burger Patties

Form and season patties

Divide ground chuck into 8 equal portions (about 4 oz each). Lightly form into loose patties about 3/4 inch thick and 4 inches wide; do not overwork the meat. Season both sides of each patty with kosher salt and freshly ground black pepper.

Cook patties

Heat a large griddle or skillet over medium-high heat and add neutral oil. When shimmering, add patties (work in batches if needed) and cook undisturbed 3 minutes until a deep brown crust forms. Flip and cook 2-3 minutes for medium (internal temp ~ 140-145°F). If adding cheese, place slices on patties during the last 30–60 seconds and cover with a lid to melt.

Transfer cooked patties to a warm platter and tent loosely with foil while you prepare buns and sauces. Keep juices with patties to preserve flavor.

House-Made Sauces (8)

Classic Burger Mayo

Use 1 cup mayonnaise as-is or whisk with 1 tsp lemon juice and 1/4 tsp garlic powder for brightness. Reserve in a small bowl.

Smoky Chipotle Ketchup

Mix 3 tbs ketchup with 1 tbs finely minced chipotle in adobo, 1/2 tsp smoked paprika, and 1/2 tsp honey. Taste and adjust heat. Keep chilled.

Garlic Aioli

Combine 1 tbs mayonnaise with 1 small clove garlic, minced, 1/2 tsp lemon juice, and pinch of salt. Let sit 10 minutes for flavor to meld.

Mustard-Dill Sauce

Whisk 3 tbs Dijon mustard with 1 tbs finely chopped fresh dill, 1 tbs mayo, and 1/2 tsp honey until smooth.

Spicy Sriracha Ranch

Mix 1 cup ranch (or 1 cup mayo + 1/2 cup sour cream + 1/2 tsp dried dill) with 2–3 tbs sriracha, to taste. Adjust creaminess with a splash of milk if needed.

Caramelized Onion Jam

Thinly slice 2 medium onions. In a skillet over medium-low heat, melt 1 tbs butter, add onions, a pinch of salt, and cook slowly 25–30 minutes until deep brown and jammy, stirring occasionally. Add 1 tbs brown sugar and 1 tbs balsamic vinegar in the final 2 minutes; cool.

Blue Cheese Spread

Crumble 3–4 oz blue cheese and fold into 1 cup mayonnaise or sour cream until slightly chunky. Adjust salt/pepper. Chill briefly to firm.

Herb Chimichurri

Finely chop 1 cup mixed parsley and cilantro. Stir with 1/4 cup olive oil, 1 tbs red wine vinegar, 1 clove minced garlic, 1/4 tsp red pepper flakes, and salt to taste. Let sit at room temperature 15 minutes before serving.

Toppings & Garnishes

Prepare vegetables: Rinse butter lettuce leaves and pat dry. Slice tomatoes into 1/4-inch rounds and lightly season with kosher salt and cracked black pepper. Peel and thinly slice red onion into rings. Arrange dill pickles and pickled jalapeños in small bowls for guests.

Cheese selection: Keep cheddar and Swiss slices chilled until needed. If melting onto burgers, add during the last minute of cooking and cover.

Optional Add-ins / Finishing

Toast buns: Heat a skillet or griddle over medium. Butter cut sides of artisan buns with unsalted butter and toast cut-side down until golden, about 1–2 minutes. Sprinkle sesame seeds on buns if desired while butter is warm.

Assemble spread: Set up a station with toasted buns, kept-warm patties (two patties per guest if desired), all eight sauces in small bowls with spoons, cheeses, lettuce, tomato, onion, pickles, and jalapeños. Provide plates and napkins and let guests build their dream burgers.

Serving and storage: Serve immediately while patties are hot. Refrigerate leftover sauces in airtight containers up to 5 days; cooked patties keep 2–3 days refrigerated.
