Prepare cinnamon rolls
If using unbaked cinnamon rolls: bake according to package or recipe instructions and cool 5–10 minutes until just warm. If using fully baked cinnamon rolls: warm them in a 300°F (150°C) oven for 5–8 minutes so they hold together but are still soft. Each roll should be roughly 3–4 inches across; split large rolls in half horizontally if desired to make two thinner slices.

Make custard
In a shallow wide bowl or baking dish large enough to hold cinnamon rolls, whisk together the eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, and salt until well blended and slightly frothy. This custard will soak the cinnamon roll without completely falling apart.

Soak rolls
Arrange the warm cinnamon rolls (whole or halved) in the custard, pressing gently to help soak for 20–30 seconds per side. If rolls are very soft, limit soaking to 10–15 seconds per side to avoid disintegration. Let excess custard drip back into the dish before cooking.

Cook French toast
Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon of butter and swirl to coat. Place soaked cinnamon rolls cut-side down (or seam-side down) into the skillet, leaving space between them. Cook 2–3 minutes per side, or until a deep golden-brown crust forms and the center is heated through. Add remaining 1 tablespoon butter as needed between batches. For thicker rolls, reduce heat to medium-low and cook a bit longer so the center warms without burning the exterior.

Warm maple syrup
While cooking the rolls, pour the maple syrup into a small saucepan and heat gently over low heat until warm but not boiling (about 3–5 minutes). If you prefer a slightly thicker, sweeter syrup, stir in the brown sugar and whisk until dissolved and syrup is just shimmering. Keep warm on the lowest heat setting or transfer to a small insulated container.

Notes and serving tips
For a crispier exterior, finish briefly under a hot broiler for 30–45 seconds (watch carefully). If using very sweet store-bought icing on the rolls, you can remove some icing before soaking to reduce sweetness. Leftovers can be reheated in a 350°F (175°C) oven for 8–10 minutes or in a toaster oven.
