Prepare the Roast
Remove the prime rib from the refrigerator and let it rest at room temperature for about 1 hour before cooking. Preheat your oven to 450°F (232°C).
Season the Roast
In a small bowl, mix together the kosher salt, black pepper, minced garlic, chopped rosemary, and olive oil to create a paste. Rub this mixture all over the prime rib roast, ensuring even coverage.
Roasting
Place the prime rib in a roasting pan, bone side down. Pour the beef broth into the pan, then place the roast in the preheated oven. Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare, 140°F for medium).
Rest the Roast
Once cooked to your liking, remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for 20-30 minutes before slicing to allow the juices to redistribute.
Serve
Slice the roast against the grain and serve with the pan juices or your favorite sides.
