Form the patties

Divide the 1 lb ground beef into two equal portions (about 8 oz / 225 g each). Gently form each portion into a patty about 3/4" (2 cm) thick and slightly wider than the bun. Make a shallow indentation in the center of each patty with your thumb to help them cook evenly.

Season

Season both sides of each patty with the kosher salt and freshly ground black pepper evenly just before cooking.

Cook the patties

Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tbs vegetable oil. When the oil is shimmering, place the patties in the pan without crowding. Cook for about 3-4 minutes on the first side until a brown crust forms. Flip and cook 2-3 minutes on the second side for medium (adjust time 1-2 minutes for desired doneness). During the last 30-45 seconds of cooking, place one slice of American cheese on each patty and cover the pan briefly to melt the cheese.

Toast the buns

While the patties rest (2 minutes after cooking), spread about 1 tsp softened butter on the cut sides of each bun. Place buns butter-side down in a clean skillet or on a griddle over medium heat and toast until golden, about 1-2 minutes.

Prepare toppings

While patties cook, wash and dry lettuce leaves. Slice the tomato into 1/4" (5 mm) thick slices. Thinly slice 1/4 of the red onion if using. Have pickles ready if using.

Mix condiments

On a small plate or ramekin, combine mayonnaise, yellow mustard, and ketchup or portion them separately if preferred.

Assemble the burger

Place the toasted bottom bun on a plate. Spread about half of the combined condiments (or 1 tbs mayo mix) on the bun. Put one lettuce leaf (or overlap two smaller leaves), then a tomato slice, then the cheese-topped patty. Add red onion and pickles if desired. Spread remaining condiments on the top bun and place it over the burger.

Serve

Let the assembled burger rest 1 minute so juices settle, then serve immediately. Repeat to make a second burger with remaining ingredients.
