Method
Pretzel Crust
Prepare oven and pan
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a mini muffin tin or a standard baking sheet if making bite shapes.
Make pretzel crumbs
Place the pretzel twists or rods into a food processor and pulse until they form coarse crumbs (about the texture of coarse sand). Alternatively, put pretzels in a zip-top bag and crush with a rolling pin.
Combine with butter
Transfer pretzel crumbs to a bowl. Stir in melted butter and granulated sugar until evenly moistened. The mixture should hold together when pressed. If using a mini muffin tin, press about 1 teaspoon of the crumb mixture into the bottom of each cup to form a compact base. If making freeform bites on a baking sheet, scoop tablespoon mounds and shape into 1-inch rounds, flattening slightly.
Optional salt
Lightly sprinkle coarse sea salt over the formed crusts if you want a salty-contrast finish. Bake for 5 minutes to set the crust, then remove from oven and let cool slightly while preparing filling.
Cheese Filling
Soften and combine cheeses
In a medium bowl, add softened cream cheese. Beat with a hand mixer or whisk until smooth and creamy (about 1–2 minutes). Add shredded sharp cheddar and shredded mozzarella and fold to combine.
Add flavor components
Mix in sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, chopped chives, and freshly ground black pepper. Continue mixing until the filling is uniform and spreadable. Taste and adjust seasoning as needed.
Portion filling
Using a small spoon or a piping bag fitted with a medium round tip, pipe or spoon about 1 tablespoon of the cheese mixture onto each prepared pretzel crust in the mini muffin tin (or onto each pretzel round on the sheet). Smooth the top slightly with the back of a spoon.
Top for melting
Sprinkle a little extra shredded cheddar over each filled bite (about 1/4 teaspoon each) to create a melty top.
Bake & Finish
Bake until bubbly
Place the filled bites into the preheated oven and bake at 350°F (175°C) for 10–12 minutes, or until the cheese filling is warmed through and the sprinkled cheddar is melted and lightly golden.
Brush and garnish
Remove bites from oven. Lightly brush the exposed pretzel edges with 1 tablespoon melted butter to add shine and flavor. Sprinkle with chopped parsley or extra chives for color.
Cool and serve
Allow the bites to cool in the pan or on a wire rack for 5 minutes so the filling sets slightly—this makes them easier to remove and eat. Serve warm or at room temperature as an appetizer or snack.
