Prep the rim

Pour Tajin seasoning onto a small plate. If you prefer a less spicy rim, mix 1 teaspoon coarse salt into the Tajin and spread evenly.

Run the lime wedge around the outside rim of a rocks or coupe glass (whichever you prefer). Press the wet rim into the Tajin (or Tajin-salt mix) to coat evenly. Set the glass aside to let the rim dry briefly.

Slice a fresh jalapeño round for garnish and set aside. Reserve the lime wedge used for the rim as an additional garnish.

Cocktail

Muddle the jalapeño

In a cocktail shaker, add the measured 0.5 fresh jalapeño (about one small slice or half of a medium slice depending on heat preference). Gently muddle 6–8 times to release the oils and some spice. Avoid over-muddling to prevent excessive heat.

Combine ingredients

Add to the shaker: 2 oz reposado tequila, 0.5 oz blanco tequila, 0.75 oz Cointreau, 0.75 oz fresh lime juice, 1 oz pineapple juice, 0.5 oz agave nectar, 3 dashes Tabasco, and 1 dash bitters (if using).

Shake

Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until the shaker is cold and well-chilled. This both chills and dilutes the drink to proper balance.

Strain

Double-strain the cocktail into the prepared Tajin-rimmed glass over fresh ice (one large cube or several medium cubes). Double-straining (using a Hawthorne plus fine mesh) keeps jalapeño seeds and pulp out of the final drink for a cleaner texture.

Finish & Garnish

Add 1–2 additional dashes of Tabasco on the surface if you want a visible spicy accent. Garnish with the jalapeño slice on the rim and the reserved lime wedge. Serve immediately.

Tasting note: adjust spice by increasing or decreasing muddled jalapeño, Tabasco dashes, or swapping reposado/blanco ratios. For sweeter profile, add up to 0.25 oz more agave.
