Pickled Red Onions

    Combine apple cider vinegar, water, sugar, and kosher salt in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar and salt dissolve.

    Place thinly sliced red onion in a heatproof jar or bowl. Pour the hot pickling liquid over the onions, pressing them down so they're submerged. Let cool to room temperature, then cover and refrigerate at least 30 minutes (best 2 hours) before using.

Beef Filling

    Heat a large skillet over medium-high heat and add vegetable oil. When shimmering, add diced onion and sauté 3–4 minutes until softened and translucent.

    Add minced garlic and cook 30 seconds until fragrant.

    Increase heat to medium-high, add ground beef, and break it up with a spatula. Cook until browned with no pink remains, about 6–8 minutes.

    Drain excess fat if there is more than 1 tablespoon, leaving a little to coat the pan. Stir in tomato paste and cook 1 minute to deepen flavor.

    Add chili powder, ground cumin, smoked paprika, kosher salt, black pepper, and brown sugar. Stir to coat the beef and toast the spices 30–45 seconds.

    Pour in beef broth, scrape up any browned bits from the pan, and reduce heat to medium-low. Simmer uncovered 6–8 minutes until liquid mostly evaporates and mixture is saucy but not soupy.

    Stir in lime juice, taste, and adjust seasoning with additional salt or pepper if needed. Keep warm until assembly.

Moo Sauce (Creamy Taco Sauce)

    Whisk together mayonnaise, sour cream, minced chipotle, lime juice, hot sauce (if using), and 1/4 tsp salt in a small bowl until smooth. Taste and adjust heat or acidity to preference. Refrigerate until ready to use.

Assembly & Serve

    Warm tortillas: heat a dry skillet over medium heat and warm each tortilla 20–30 seconds per side until pliable, or wrap stack in foil and heat in a 300°F (150°C) oven for 8–10 minutes.

    Build tacos: place a warm tortilla on a plate. Spoon 2–3 tablespoons of the beef filling down the center.

    Add shredded cheddar (about 2 tablespoons), a tablespoon of shredded lettuce, a tablespoon of diced tomatoes, and a few slices of pickled red onion.
