Combine and heat
In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Add 2 tablespoons dried culinary lavender buds. Place over medium heat, stirring until the sugar is fully dissolved and the mixture just reaches a simmer (do not boil vigorously).

Infuse
Reduce heat to low, allow the mixture to gently simmer for 2 minutes, then remove from heat. Cover and let steep for 15 minutes to develop the lavender aroma without becoming bitter.

Strain and finish
Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing gently on the lavender to extract flavor. Stir in 1 teaspoon fresh lemon juice if using (brightens the syrup). Let cool to room temperature, then refrigerate. Syrup will keep up to 2 weeks refrigerated.

Prepare glass and mint
Place 8–10 fresh mint leaves into a sturdy highball or Collins glass. Add 0.75 oz (approx. 3/4 oz) lavender simple syrup and 1 oz fresh lime juice. Using a muddler or the back of a wooden spoon, gently press the mint leaves just enough to release their oils — do not shred them.

Pour about 3 oz club soda over the ice. Using a long spoon, gently lift and stir from the bottom 4–6 times to combine the syrup, lime, rum, and mint without bruising the leaves excessively.
