Cook aromatics
Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Brown beef
Increase heat to medium-high and add the ground beef. Break it up with a spatula and cook until mostly browned, about 4–6 minutes.

Season and simmer
Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Add the tomato paste and 1/4 cup water; scrape up any browned bits. Reduce heat to medium-low and simmer until sauce is slightly thickened and flavors meld, about 3–4 minutes. Taste and adjust salt/seasoning. Keep warm off the heat.

Heat oil
Pour 1/2 cup vegetable oil into a large skillet (or cast-iron pan) to a depth of about 1/8–1/4 inch. Heat over medium-high until shimmering and a small piece of tortilla sizzles immediately (around 325–350°F / medium heat).

Crisp tortillas
Working in batches, fold each tortilla in half (to form a taco shell) and hold together with tongs, or use a metal spatula to press. Carefully place in the hot oil and fry 45–60 seconds per side, or until golden and crisp. Flip once; be careful — oil may spit. Transfer to a paper towel–lined tray to drain. Repeat with remaining tortillas. Alternatively, for less oil, brush both sides with oil and cook in a 400°F oven on a baking sheet for 8–10 minutes, flipping once, until crisp.

Melt cheese in shells
Preheat oven broiler or set oven to 400°F if using oven method. Place 8 crisped taco shells on a rimmed baking sheet. Divide shredded cheddar and Monterey Jack between shells, placing cheese inside so it melts into the shell. Return to oven or under broiler briefly (1–2 minutes) just until cheese is melted and bubbling—watch closely to avoid burning.

Assemble tacos
Spoon about 2–3 tablespoons of the seasoned beef into each cheesy shell (adjust to taste). Top with a small handful of shredded cabbage, a drizzle of garlic cilantro sauce, and a sprinkle of chopped cilantro. Serve immediately with lime wedges for squeezing.
Garlic cilantro sauce

Make sauce
In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, chopped cilantro leaves, minced garlic, lime juice, honey, salt, and black pepper until smooth. If the sauce is too thick, add up to 1 teaspoon water at a time to reach a drizzleable consistency. Taste and adjust acidity or sweetness as desired.

Serve tacos hot so the shells stay crisp and the cheese remains melty. Leftover beef can be refrigerated up to 3 days; re-crisp tortillas in a 350°F oven for 5–7 minutes before assembling.
