    Combine ingredients

    Add Aperol, fresh lemon juice, simple syrup, egg white, and two dashes of Angostura bitters to a cocktail shaker. Do not add ice yet for the first shake (dry shake).

    Dry shake

    Seal the shaker and shake vigorously for 12–20 seconds without ice. This aerates and emulsifies the egg white, creating a silky foam.

    Wet shake

    Open the shaker, add ice (about 6 large cubes), reseal, and shake vigorously for 10–15 seconds until well chilled (the outside of the shaker will become frosty).

    Double strain

    Strain the cocktail through a fine-mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and ensure a smooth texture.

    Finish with bitters

    Carefully add a final decorative drop or two of Angostura bitters onto the foam. Use a toothpick or cocktail pick to gently swirl a simple pattern if desired.

Garnish & serve
