Method

Preparing the Squash Purée

    Cook the Squash

    Peel and cube the butternut squash. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Make the Purée

    Add butter, salt, and nutmeg to the cooked squash. Use an immersion blender to purée until smooth. Set aside.

Sautéing the Vegetables

    Prepare the Vegetables

    Chop zucchini, bell pepper, and carrot into bite-sized pieces.

    Sauté

    In a skillet, heat olive oil over medium heat. Add vegetables, sprinkle with salt and pepper, and sauté for 5-7 minutes until tender. Set aside.

Cooking the Steak

    Season the Steak

    Season the top sirloin steak with salt and black pepper on both sides.

    Cook the Steak

    In a skillet, heat olive oil over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare. Remove and let rest.

Making the Au Jus

    Prepare the Au Jus

    In the same skillet used for the steak, add beef broth, red wine, and Worcestershire sauce. Bring to a simmer, scraping up any browned bits, and season with salt and pepper. Cook for 5 minutes.

Plating

    Serve

    On a plate, create a bed of squash purée, top with sautéed vegetables, and place the sliced steak on top. Drizzle with au jus and serve immediately.
