Pork Meatballs Preparation

Make the Meatballs

In a large bowl, combine ground pork, minced garlic, grated ginger, salt, black pepper, egg, and bread crumbs. Mix until well combined.

Form the Meatballs

Roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet.

Cook the Meatballs

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.

Make the Curry

In the same skillet, add the remaining vegetable oil, chopped onion, and cook until translucent. Add diced bell pepper, carrot, and zucchini, and sauté for another 5 minutes.

Add Coconut Milk

Stir in the curry powder, red chili flakes, and coconut milk. Bring to a simmer.

Combine Meatballs and Curry

Return the meatballs to the skillet. Cover and simmer for 15-20 minutes, until meatballs are cooked through and flavors meld. Season with salt to taste.

Serve the pork curry over cooked rice and with pita bread on the side.
