Prepare the Filling

Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until translucent. Add ginger paste, red bell pepper, and green peas. Cook for 3-4 minutes. Crumble the paneer and add it to the mixture. Stir in coriander powder, garam masala, and salt. Cook for another 2-3 minutes. Remove from heat and let it cool.

Make the Dough

In a mixing bowl, combine 2 cups of all-purpose flour, a pinch of salt, and 2 tablespoons of oil. Gradually add water and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Samosas

Divide the dough into small balls. Roll each ball into a thin oval shape. Cut it in half to form two semicircles. Take one semicircle, create a cone by folding it and sealing the edge with water. Fill the cone with the prepared filling and seal the open edge by pinching it. Repeat with the remaining dough and filling.

Fry the Samosas

Heat oil in a deep frying pan over medium heat. Once hot, add the samosas in batches and fry until golden brown and crispy. Remove and drain on paper towels.
