Preparing the Filet Mignon

Sear the Steak
Preheat a skillet over medium-high heat and add olive oil. Season the filet mignon with salt and black pepper. Once the oil is hot, place the steak in the skillet and sear for 4-5 minutes on each side for medium-rare. Adjust cooking time based on your preference. Remove from skillet and let it rest.

Blend the Purée
Add butter, salt, black pepper, and heavy cream to the cooked squash. Use an immersion blender or a standard blender to purée until smooth. Adjust seasoning if necessary.

Serve
On a plate, create a base with the squash purée, place the filet mignon on top, and arrange the sautéed vegetables beside it. Drizzle with au jus before serving.
